I had this for lunch today and it was so good I thought I would pass the recipe on. It is easy, quick and really good.

400g cod fillet
1 carrot, sliced
1 red pepper, cut into chunks
2 tablespoons red curry paste
400ml of coconut milk
2 tbsp lemon juice
4 servings good rice
Thaw fish and cut into cubes of about 3×3 cm
Fry the vegetables in a little oil, add the curry paste and coconut milk and lemon juice, let it all simmer for 5 minutes, then add the fish.
Stir, bring to the boil and simmer for ten minutes, at the very end of cooking add the lemon juice.
Season with a little salt and serve with freshly cooked jasmine or other good rice.
Do not completely defrost the fish before cutting it, fish is easier to cut if it is still a little frozen. Also, after you have cut the fish into cubes, lightly salt it and leave it for ten or so minutes, and then rinse the salt off. This seems to make it less likely to fall apart when being cooked and gives it a better texture when you eat it
